🥘 Ingredients (4 pers.)


• 1.2 kg cut-up chicken (thighs, drumsticks, or thighs)

• 2 tablespoons Colombo spice blend - Le Panier d’Herbes

• 1 onion

• 2 cloves of garlic

• 2 potatoes

• 1 zucchini

• 1 eggplant

• 2 tablespoons of oil (olive or sunflower)

• 1 lime (juice)

• 200 ml coconut milk

• Salt and pepper

• 1 sweet chili pepper (optional)


👩‍🍳 Preparation


1. Marinate the chicken with the lime juice, Colombo spice blend, sliced ​​onion, minced garlic, salt, and pepper. Let it marinate for at least 1 hour, ideally overnight.


2. Brown the chicken in a Dutch oven with the hot oil.


3. Add the chopped vegetables, pour in a glass of water, and simmer, covered, over low heat for 30 minutes.


4. Stir in the coconut milk, mix well, and let it thicken for a few minutes. Adjust the seasoning to your taste.
